vegan shrimp curry   it tastes better than it looks    MG 1494

recipe: shrimp curry

2 tbsp curry powder (i just used generic curry powder, cumin was the main ingredient)
1 large can coconut milk (19 oz)
2 cloves garlic, chopped or pressed
1 yellow onion, chopped (optional)
1 lb broccoli chopper
1 lb tofu, diced
2 zucchini, sliced
1 lb uncooked shelled shrimp, thawed
~1.5 tsp salt (to taste, about this much)

prepare a base food to serve this over - rice, couscous, quinoa, bulgur.

cook onion, garlic, curry powder in a big pan over medium heat. add salt to taste.
add vegetables, cover and simmer for ~5 minutes.
add shrimp and simmer for 3 minutes.
serve over rice.
