under construction: blackberry apricot pie    MG 9290

when sequoia and i were picking blackberries earlier this week, i promised to bake them into a pie, so here is the outcome…

CRUST
i used 4 graham crackers, 1 stick margarine/butter and 0.5 cup flour, 30 seconds in a food processor and pressed into a pie dish.

FILLING
12 apricots
1 quart blackberries
0.5 cup sugar
1 teaspoon cinnamon
2 tablespoons arrowroot, cornstarch, or flour (to absorb juice)

clean, peel, pit & slice apricots.
mix apricots with dry ingredients - cinnamon, sugar & arrowroot
put blackberries into pie shell
put apricot mixture atop blackberries

TOPPING
0.5 cup (1 stick) margarine/butter
0.5 cup brown sugar
1 cup flour

process these ingredients together and pour over the filled pie

BAKE

35 minutes at 425 degrees, or until juice boils over out of the pie.
