beet bagels cooling on a rack

as a natural follow-up to purple pizza crust, i threw a beet into my oat-bran bagel dough to see what would happen. i think the beet color boils out, because the intense color of the dough endures in the (un-boiled) pizza crust, but for the bagels, the intense beet color found in the dough only remained in a marbled pattern in the finished beet bagels.
