Recipe: One medium-large beet, simmer or bake until tender, dice. In blending bowl, add 4 tbls. walnuts or almonds, 1-2 cloves garlic, 4 tbls. olive oil, 2 tbls. red wine vinegar, 1/2 tsp. salt and blend till a coarse meal. Add beets and blend until combined and consistent color. Adjust all ingredients to your taste. Serve with crackers or sliced baguettes.
