The Day After: Turkey Carcass Soup
So after our meal yesterday I broke down the turkey and roasted on the mire poix like vege mixture and turned the bones over and over to extract their flavor.
My next step was to pick the meat from the bones and sort.

I prepared a Heritage Turkey this year. Extremely lean flavorful.
