still trying for a better photograph of this dessert, its really good but the photos all come out pretty unappetizing…

recipe: homemade cherry-coconut-tequila vegan ice cream

1 can coconut cream (15 oz)
1 tablespoon arrowroot
1 shot tequila
1 cup granulated sugar
1 teaspoon vanilla
1 cup fresh cherries

if possible, chill the ingredients in advance, leave them in the fridge overnight.

to prepare:

remove cherry pits, slice cherries and set aside in fridge.

mix everything else (no cherries) in food processor. turn on ice cream maker and pour the liquid in. after 25 minutes, add cherries and continue running the ice cream maker for another 5 minutes.

pour into tupperware and place in freezer until desired texture is reached. the tequila, should prevent the ice cream from freezing solid and becoming impossible to scoop.
