adapted from a recipe here. i used pickled garlic instead of capers, and we don't have any concentrated pomegranate juice, so that is omitted. tastes great!
Recipe

Pomegranate Topping

1/4 cup toasted almonds, chopped
2 Tbsp pickled garlic, chopped
1/4 sweet yellow onion, finely minced
Seeds of 1 pomegranate
1 Tbsp honey
1 tsp olive oil

stir ingredients together and refrigerate until meal time.

CousCous

1 cup dry cous cous
2 cups boiling water

add boiling water to couscous, cover 5 minutes, fluff.

Seared Ahi

2 ahi tuna steaks
soy sauce
black pepper
1 Tbsp olive oil

marinate tuna in pepper and soy sauce.
heat olive oil in frying pan, high heat
sear tuna 1 minute per side in hot frying pan

serve sliced ahi atop couscous, top that with the pomegranate-almond dressing.
